We celebrated that night with a dinner made by yours truly. I would not consider myself to be a Martha Stuart, but I do have the ability when I put forth the effort. Most of my dinners consist of a main dish and thats all. Landon loves salad so he'll make one for himself to eat with dinner if I don't feel like cutting up veggies and washing the lettuce and all that effort. But I thought I had to do something special for our anniversary. So I made stuffed pork loin, potato wedges with seasoned snap peas, a carmelized pecan and strawberry spinach salad and a mint chocolate chip ice-cream pie. (not pictured). It was very simple so if you are looking for a recipe let me know and i'll put it up here. I suprised landon with a decorated table with candles and a self-made flower arrangement and Martinelli's and $1 wine glasses to make it look special.
The delicious meal...We got to REALLY celebrate in las vegas the following weekend. We were able to stay in a beautiful hotel and enjoy the weekend away together. It was a 5 1/2 hour drive to vegas but it was so nice to just have time to talk to each other. Life is so busy that sometimes we don't take the time to laugh and enjoy one another's company. He really is my best friend and I love singing duets and discussing our opinions on controversial issues. It was a short weekend but we got to do a lot of fun things like play tennis, see the wax museum, go to the MWC championship basketball game (it was supposed to be BYU...), a wonderful dinner and gelato.
